Sticky Blackberry Sponge Pudding

This Sticky Blackberry Pudding is one of my favourite ways to enjoy blackberry season.

With a tender vanilla sponge studded with fresh juicy blackberries soaked in an indulgent toffee sauce, it’s so moist and gooey.

Sticky Blackberry Sponge Pudding

We start by making the sponge which requires just one bowl and a handful of ingredients, starting with dairy free buttermilk and yoghurt. The soft juicy blackberries are folded through for that pop of sweet tart flavour in every single bite. After baking it’s soaked in a sticky toffee sauce which seeps down into the sponge for the gooiest pudding. Serve with ice cream or custard for the perfect seasonal dessert.

Tips for making the best sponge:

1. Use buttermilk - due to the acidity, buttermilk helps break down gluten and proteins in cakes to make them more tender. I make a dairy free alternative by adding vinegar to dairy free milk.

2. Don’t overmix - this will cause dense, tough, or deflated cakes

3. Use room temperature ingredients - room tempetature ingredients bond together better, creating a seamless and even texture

4. Weigh your ingredients and follow the exact recipe

5. Don’t overbake or rush!
