Raspberry Coconut Caramel Brownies

Rich fudgey brownies studded with raspberries filled with a caramelised coconut centre.

The tart raspberries, with the sweet caramel coconut centre and the rich chocolatey brownie make for the perfect combination. 

My recipe is egg free and can be made without dairy for an easy vegan dessert! 

Raspberry Coconut Caramel Brownies

The brownie starts with melted butter, sugar and chocolate before mixed in with the dry ingredients for that deep glossy colour and gooey texture. Juicy raspberries are folded in and the sweet caramelised coconut is sandwiched in the centre. They are baked to form that crinkle top and served with ice cream for an indulgent dessert.
