Caramelised Banana, Date and Olive Oil Pudding

Gooey, indulgent, comforting, this pudding has a moist date and olive oil sponge covered in sliced bananas. Dusted with cinnamon and a drizzle of honey to create that caramelised top, it’s covered in a sticky olive oil caramel sauce and a sprinkle of salt.
My recipe is egg-free and can be made without dairy, plus it’s super simple to make.

Caramelised Banana, Date and Olive Oil Pudding
The combination of flavours and texture is just so delicious. The olive oil throughout enhances the creamy gooey texture and adds a subtle savoury flavor that contrasts with the sweetness from the caramelised bananas and dates.
Made without eggs or dairy we start by making the sponge. A thick medjool date paste acts as the base with olive oil, brown sugar and dairy free yoghurt added. A layer of banana coins are spread on top which are covered with a dusting of cinnamon and a drizzle of honey. Whilst baking the bananas caramelise with slight charred edges before being soaked in a sticky toffee sauce.
