When I think of my perfect festive celebration cake, it would probably be this. This is my Berry Red Velvet cake and it might have a festive name but trust me it has everything you know love about the classic.
Four layers of light, moreish velvety sponge sandwiched together with sweet tart berry jam. Wrapped in a creamy, tangy cream cheese frosting, this really does need to be on your table this Christmas.

You won't need any eggs or any dairy, and the best part is it's super simple to make!

Key Ingredients
Brown Sugar: Light brown sugar for flavour and texture
Dairy Free Butter: You’ll need it for the buttercream
Dairy Free Yoghurt: I recommend using yoghurt with at least 2% fat content. This recipe has been tested with both dairy and nondairy milk - soya is my favourite!
Self raising flour: for a well risen sponge
Red food colouring: I recommend using an extra strength paste - this will ensure you achieve the beautiful red colour for the sponge

We are going to make our sponge first. Simply whisk the wet ingredients together and then sift in the dry - all you need is one whisk and a bowl!
