Triple Berry Tres Leches

Triple milk, triple berries… this cake has a super moist vanilla sponge packed with blueberries soaked in a triple milk mixture. Covered in a layer of mixed berry jam and sweet whipped cream it’s finished with a dusting of cinnamon and fresh berries.

No eggs are required and can be made without dairy for a fully vegan cake!

Triple Berry Tres Leches

It starts with a simple one-bowl sponge which is baked until golden. The sponge is poked with holes and then covered in a triple milk mixture which soaks into the sponge for that light yet moist texture. 

After a double soak with the milk, it's popped in the fridge overnight so the milk can absorb into the sponge. The next day it’s covered with mixed berry jam, whipped cream and fresh berries.
