Mini Egg Mousse Cake

This is my Mini Egg Mousse Cake. It has a layer of moist chocolate sponge topped with the creamiest chocolate mousse packed with crushed mini eggs. It’s finished with a dusting of cocoa powder and more Easter chocolate for a perfect celebration cake!  The recipe doesn’t require eggs and can be made without dairy using 'free from' ingredients plus it’s super simple to make. 

Mini Egg Mousse Cake

We start by making my one-bowl chocolate cake for the first layer. For the creamy chocolate mousse, we need just 2 ingredients that are folded together for that beautiful light texture. Crushed mini eggs are folded in for a little bit of crunch in every single bite. It’s finished with a dusting of cocoa powder and Easter chocolate for an impressive yet simple dessert.
