Combining two of the most Quintessentially British flavours this is my Earl Grey Sticky Toffee Pudding. A sweet moist date sponge infused with smooth aromatic earl grey flavour. Topped with an indulgent sticky earl grey toffee sauce, served warm it’s gooey and comforting for the perfect shareable pudding.

You won't need any eggs or any dairy, and the best part is it's super simple to make!

Key Ingredients
Earl Grey Tea Bags: The quintessential British black tea blend, beautifully balanced with flavours of bergamot
Brown Sugar:Â Light brown sugar for flavour and texture
Dairy Free Butter: You’ll need it for toffee sauce
Dairy Free Yoghurt: I recommend using yoghurt with at least 2% fat content. This recipe has been tested with both dairy and nondairy milk - soya is my favourite!
Self raising flour: for a well risen pudding

We are going to make our sponge first. The earl grey tea bags are left to steep before juicy medjool dates are added. Once soft the remaining wet ingredients are added before the dry ingredients are added. The next step is to make the toffee sauce. You will only need four ingredients - brown sugar, dairy free double cream, earl grey tea bags and butter. Once the sponge is baked we are going to soak the sponge is the sauce whilst still warm.
