Coconut Caramel Self Saucing Pudding

Fudgy and moist coconut sponge with an indulgent caramel sauce that forms whilst baking and soaks through for the gooiest pudding. This dessert is dairy-free, egg-free, and super easy to make! 

Coconut Caramel Self Saucing Pudding

We start by making my one bowl coconut sponge with dairy-free yoghurt and buttermilk. Sweetened with brown sugar and desiccated coconut its got a gorgeous creamy caramel flavour. Before baking the sponge is sprinkled with brown sugar and cornflour which is then covered with boiling water. This sinks to the base of the dish as it bakes, seeping through the cake making it so moist and forming that indulgent caramel sauce.
