Coconut Caramel Cake

3 layers of the softest coconut sponge layered in caramel buttercream and filled with gooey coconut caramel. This recipe is super simple to make and you won’t need any eggs and it can be made without dairy. 

Coconut Caramel Cake

 We start by making my one bowl coconut sponge with dairy free yoghurt and buttermilk. Sweetened with brown sugar and desiccated coconut its got a gorgeous creamy caramel flavour. Between each layer of sponge is smooth caramel buttercream and my three ingredient coconut caramel for a perfect Spring time cake.
