Triple Layered Banoffee Mousse Cake

A moist and perfectly squiggly banana sponge layered with a salted caramel mousse covered with a salted caramel layer and dark chocolate shavings. 

My recipe is egg free and can be made without dairy for an easy to make dessert. 

Triple Layered Banoffee Mousse Cake

We start by making the soft banana sponge which comes together in just one bowl. For the creamy caramel mousse, we are using my 3 ingredient caramel which is whipped with cream for that beautiful light texture. It’s finished with a layer of gooey caramel and a dusting of chocolate shavings.
