Sticky Toffee Christmas Cake
A traditional Christmas cake with a twist...
Packed with gooey dates and covered with a sticky toffee sauce, the cake is rich, moist, and full of coffee flavour. This failsafe recipe requires no soaking and no one will guess it’s vegan!
This cake is completely vegan and so easy to make!
Sticky Toffee Christmas Cake
This is the Christmas Cake for all the Christmas Cake haters... I feel like boozy fruit cake isn’t for everyone so If like me, you’re not a fan of the traditional Christmas Cake, my Sticky Toffee version might be the cake for you!
When it comes to the fruit of the Christmas cake, you can cater it more to what you prefer, but I used a mix of dates, currents, and raisins. Another big part of a Christmas cake is… alcohol. In this Sticky Toffee version, I replaced the alcohol with coffee for a delicious rich flavour with pairs so well with the sweetness of the mixed fruit and toffee sauce.
Make ahead
Whilst this cake requires no soaking and can be made on the day (perfect for busy and forgetful people like myself!) it can also be made ahead of time - up to 10 weeks! If you are making this ahead of time, store the cake without the sauce in a double layer of baking parchment then a double layer of foil, and keep in an airtight tin or container. ‘Feed’ the cake with coffee and let it seep into the cake.
