If I ever had my own bakery, these would 1 million percent be on the menu. These are my earl grey blueberry muffins. A tender earl grey sponge with just a dash of sweet lemon flavour, studded with juicy blueberries concealing a molten blueberry jam centre. Sealed with a creamy earl grey buttercream, imagine these at a weekend brunch, afternoon tea, a garden party, they’re honestly dreamy.

You won't need any eggs or any dairy, and the best part is they are super simple to make!

Self Raising Flour: for the perfect rise and height!
Brown Sugar:Â adds moisture and depth of flavour
Earl Grey Tea Bags: Brewed for optimal flavour, they are used in the sponge and buttercream
Dairy Free Milk: I recommend using milk with at least 2% fat content. This recipe has been tested with both dairy and nondairy milk - almond or soya are my favourite!
