For this recipe you won’t need any eggs or any dairy, plus they are super simple to make.
Coconut and Passionfruit Cupcakes
We start by making my one bowl coconut sponge with desiccated coconut and coconut milk for that sweet creamy flavour. The passionfruit curd is sweet, tangy and creamy made with just 4 ingredients and is used to fill each cupcake. Sealed with creamy coconut buttercream, these cupcakes  are perfectly light, fluffy and moist, bursting with tropical summer flavour.
